Taking advantage of the spoils of the shooting season, pheasant is firmly on the menu at this year’s RHS Chelsea Flower Show, taking place from Tuesday 21 September – Sunday 26 September at the Royal Hospital Chelsea, London.
After the original event date was changed from May to September and with encouragement and support from British Game Assurance (BGA), chef Ian Page saw an opportunity to promote the use of game on a massive scale and invite more people to try the sustainable and healthier meat option of pheasant.
Responsible for managing and running The RHS Chelsea Flower Show’s prestigious Gala night and three of its onsite venues including The Ranelagh restaurant, Champagne & Seafood restaurant and the Jardin Blanc, Ian is Sodexo Prestige’s head chef for major UK events, a company specialising in luxury hospitality and events.
Using BGA assured pheasant, he has created pheasant scotch eggs – which are made using eggs from premium brand Clarence Court – and a main dish of ‘pheasant Kiev’ which offers a luxury twist on a popular classic. While other options are available on the menu, the pheasant dish includes a foraged feast of broccoli, confit apples, celeriac, black garlic and pickled mushrooms. United by a desire to promote the ethical, environmental, and healthy value of game, BGA, Ian and Sodexo Prestige are passionate about sourcing ingredients as locally and responsibly as possible, keeping food waste and miles to a minimum.

“When we had to change our plans because of Covid and I realised the event would be happening right in the middle of the shooting season, I immediately thought of how we might be able to incorporate game into our menus. On the opening Gala night, we will welcome around 4300 guests including Her Majesty The Queen – so it would be wonderful to see them all enjoying the pheasant scotch egg canapés. Working with BGA, we’d like to promote the use of game at events in the UK like The RHS Chelsea Flower Show as much as possible so that more people become aware of its value and delicious taste.”
